Kefalotiri is a very hard cheese that has a salty and sharp taste. It can be consumed as is, fried in olive oil to produce a dish called saganaki (flaming cheese, see recipe below), or it can be added to pasta dishes, meat, or cooked vegetables. It also is a perfect grating cheese. (kefalotyri)
Recipe for Saganaki - (Fried Kefalotiri cheese)
Serves (4)
Ingredients:
1 egg
1/4 c. flour
1/2 lb. kefalotiri
1 whole lemon, squeezed
Directions:
Beat the egg in a bowl and place the flour on a plate.
Dip the piece of cheese in the egg, then roll it in the flour.
Heat butter in a frying pan and fry the cheese until the flour coating on both sides of the cheese is golden.
Squeeze lemon juice onto the cheese before removing it from the pan. Cut into smaller pieces and serve immediately (excellent hot).
