well made cheese
never had this cheese before...i was impressed with the pale firm clean texture and appearance...this is not a soft cheese. this cheese, new to me, seems to be approximately the Greek version of gruyere or jarlsberg or the american mozzarella pizza cheese. I could taste the slight goat/sheep milk note in the cheese which would be the main difference that i could detect....overall the flavor is mild and quite salty....i eat this cheese melted on toast, typically homemade rye bread toast....its obviously well made high quality cheese, easy to eat, more rustic than gruyere or jarlsberg

This is a unique textured cheese. Mild flavour and quite enjoyable. Never had it before.

This is our second order, and I'm sure there will be a third order if it is still in stock later. BTW, the shipping took 4 days: the package languished in the local regional postal distribution center for 2 days. So much for "priority" mail.
